This roasted pumpkins came to be when I opened up my refrigerator and saw a pumpkin for so long.
This healthy roasted sidedish is easy to make and it is very creamy and fulfilling. If you are craving for sweet during these days, add this to your daily menu. It can help you to avoid more sweets for dessert.
4 tbsp olive oil
3 garlic cloves (sliced)
2 tbsp dried or fresh thyme
salt and pepper to taste
Make the marinade by mixing together the garlic, spices, olive oil, salt and pepper to taste.
Rub the pumpkin wedges with the spice mixture until coated all over and let them marinate until ready to roast them.
Bake the pumpkin wedges in the preheated oven at 200°C for about 30 minutes or until the pumpkin wedges are as soft as you like them, I like them very soft.
You can serve it with a yogurt dip or a tahini dip as a side.
