Salad recipes are my favorite way to showcase vibrant, in-season produce – fruits and veggies that are so good on their own that you don’t need to do much to make them into a delicious meal. On cold winter nights, I like to brighten up our dinner table with a big, green mix. On beautiful, warm days when I’d rather be outside than in the kitchen, summer salads are the perfect solution: they’re simple to toss together, but they’re totally delicious nonetheless.
I’ve always known that kiwi fruit are a good source of Vitamin C, but I wasn’t aware of all the other benefits of this fuzzy little fruit. Make a quick search on Google and you will get plenty of health benefits for this delicious fruit.
1 large cucumber
2 tbsp olive oil
Salt & pepper
1/4 cup Fresh mint, chopped
2 tbsp lemon juice
Prepare a big serving plate.
Thinly sliced the cucumber and kiwis. First add all the kiwis to the plate and then add the cucumber slices in the center.
Add fresh mint on top and add your mozarella on it.
In a small jar, add 2 tbsp of lemon juice and olive oil, salt and pepper and mix it well.
Drizzle your sauce on top of the salad and serve it into each serving plate.
