Thanks god that this heat finally finished. I just ate everything that i found to skip cooking. I don't know what happened this year! It was pretty awful without airconditioning. I finally got myself one because i couldn't tolerate it anymore. So, i can cook now.
This marinated chicken in yogurt and saffron with fresh lemon juice on the grill pan or bbq with tomatoes & onions look so fresh and bright that I just wanted to make it for a long time, and I wish I did it sooner! It’s a simple summer meal that is bursting with flavor, and ready in under thirty minutes. Bam!
You can serve it with fresh bread or Persian rice.
Here's the ingredients:
400 gr boneless chicken
3 tablespoons yogurt
1 gr bloomed Saffron
Salt & pepper
2 small onions
2 tbsp lemon juice
Cut the chicken into small pieces.
In a bowl, add the chicken, yogurt, saffron, lemon juice,salt & pepper. Mix all the ingredients until well coated. Let it stay in the fridge for 2 hours or more if you have time.
Dice the tomato and onion into small pieces. Slice the zucchini as well & keep it for later.
When the chicken is well marinated, take it out of the fridge and use the grill sticks and put them one by one on the stick.
You can use a grill pan and grill them on the stove for 5-6 minutes each side minutes and then let it cook in the oven for 10 minutes at 180 °C.
If you have bbq, you'll get a better result for this grill saffron chicken.
