A long time ago, there was a famous ceremony in the rice fields to pray for rain. Farmers made rice pudding for this ceremony because they believed that the milk and the rice can bring them blessings. We can still bring blessings to our lives by making this recipe.
3 3/4 cups whole milk or you can use coconut milk
1/2 cup short-grain rice
2 tablespoons coconut sugar
1 teaspoon pure vanilla extract
Pinch of salt
1 tsp cardamom
2 tbsp honey
2 tbsp pistachios
Some rose petals for the garnish
Bring 3 1/2 cups milk, the rice, coconut sugar, vanilla, cardamom and salt to a boil in a medium saucepan. Reduce heat, and simmer, stirring often, until rice is tender and liquid has been absorbed 25 to 30 minutes.
Remove from heat. Stir in remaining 1/4 cup milk and the honey. Let stand for 5 minutes. Divide among parfait glasses or bowls, and drizzle with honey, pistachios, and roses.
