Quinoa and Rocket Salad

Today, I’m craving healthy home cooking salad & this creamy quiona salad can be a comfy dish.


This mega-healthy quinoa and rocket salad was inspired by a salad that I've eaten in Madrid. I was desperate for recipe inspiration, so I sampled a few of their salads and particularly enjoyed their spinach and quinoa salad with pine nuts and parmesan.



Ingredients:


1 cup quinoa

1/2 cup green peas

1/2 cup green beans

1 small onion, sliced

Some rocket salad

Olive oil

1 tbsp parmesan

1/2 clove of garlic

Salt & pepper


Method: in a frying pan, add some olive oil, and add onion slices with garlic. Sauté for a few minutes (5-7 minutes).


Add green beans & let it cook for 3 minutes.


Add quinoa & 1 cup of water & green peas to your pan and let it cook for 20 minutes.


After 20 minutes, when the water is finished, add 1 tbsp of parmesan cheese & some olive oil.


Sprinkle some salt & pepper to taste.


Serve it into your serving plates.


Garnish it with rocket salad.
