Crispy Codfish

Moday's recipe always should be delicious & nutritious to help us keep going for the rest of the week. This easy codfish fillet with creamy mashed potatoes is my favorite to start the week.

Here's the recipe:

400 gr fillet of codfish 5 tablespoons almond flour 2 tbsps paprika 1 tbsp garlic Salt & pepper 1/2 cup crispy flour Some olive oil 1 large egg

In a medium bowl, beat together egg, garlic powder, salt, and pepper. Place cod in the bowl, and thoroughly coat with the mixture. In a medium plate, add the almond flour. Dip the cod in the flour. In a separate medium plate, add crispy flour, paprika and a pinch of salt. Dip again the cod in the crispy mixture, and thoroughly coat all sides.

In a medium frying pan, heat some olive oil and add the fillets. Fry the fish until golden brown, and flesh is easily flaked with a fork. I always fry it on high heat for 2 minutes each side and then turn the heat down and use a lid to cover it and avoid more oil!
