Mediterranean Eggplant with poached egg

Time to time, I like to create a recipe that has a flavor from my own Mediterranean culture. This eggplant plate is full of taste & fibers. The taste is Mediterranean and it is probably new to you. It makes you full & it is healthy as well. I suggest you make it and then judge it!



Here's the recipe:

2 eggplants 1 onion Salt & pepper 1 can of tomato puree Some olive oil

In a medium frying pan, chopped the onion and saute it for 10 minutes until becomes golden, set it aside.

In the same frying pan, add some olive oil and saute your eggplants for 10 minutes. Turn the eggplants once in a while.Add more oil if it is needed.

Add the onions, tomato puree, salt & pepper to the eggplants and cover it with a lid.

Let it cook for 30 minutes. The eggplants should be well cooked.

Serve it in a bowl and add a poached egg on top.


Sprinkle some fresh coriander and some saffron if you desired.
