Grilled Fennel salad

Recently, i can't stop eating this salad. It’s full of tender fennels. This salad would be a wonderful hearty vegetarian option on your table. It also packs great for work lunches and meal prep. Beware, it’s hard to stop eating it once you start.


2 fresh fennel bulbs

2 tbsp chopped parsley

2 tbsp chopped dill

1 clove of garlic, finely sliced

1 lemon

Olive oil

2 tbsp unsalted pistachios

2 tbsp parmesan cheese


Place your grill pan on the heat.

Slice the fennel bulbs and Place them on the pan and let it cook for 7-8 minutes each side until it is smooth but still crunchy.

In a bowl, add your grilled fennel slices, add some olive oil, garlic slices, fresh lemon juice, salt & pepper and mix everything.

Add the herbs and mix again.

Let it stay for 30 minutes until everything well coated in olive oil, garlic and herbs.

Choose a serving plate and add parmesan cheese and pistachios to your bowl. Give it a toss and serve it into your serving plate.
