Homemade granola

It sounds like a perfect day for some homemade granola. I love oats because it allows us to make different healthy and delicious recipes. I always keep a jar of oats at home to prepare savory and sweet recipes during the week & besides that it would be a fun and simple weekend project to make with your loved ones. It would also make a delicious gift for your friends, family or new neighbors. Enjoy it plain as a snack, or add milk or yogurt for a wholesome breakfast.

Most of my granolas are entirely naturally sweetened with honey or maple syrup, but you can always use natural sweetener, plus two tablespoons of regular sugar.

  • 1/4 cup coconut oil

  • 1/2 cup honey or maple syrup

  • 1 tablespoon ground cinnamon

  • 1/2 teaspoon cardamom

  • 1/2 teaspoon salt

  • 1/2 cup Coconut shreds

  • 2 cups old-fashioned rolled oats

  • 1 cup sliced almonds

  • 1/2 cup raisins or other dried, chopped fruit

Heat the oven to 180°C and line a baking sheet with parchment paper: set aside for later.

Whisk together the coconut oil, honey, cinnamon, and salt.

Add the oats and almonds and stir to coat. * Spread the oats out onto the prepared baking sheet.

Bake for 20 minutes, stirring halfway through.

It will still feel wet coming out of the oven but will dry as it cools.

Remove from the oven, add the raisons and coconut shreds, tamp down, and cool.

Make sure to keep it in a glass jar.
