Muffin with dates (no added sugar)

These soft and cakey date muffins are completely irresistible. Packed with walnuts and a hint of cinnamon, these cake-like muffins taste like muffin tops and are so easy to make. It's a truly unforgettable healthy without the added sugar!

As soon as I posted a few stories about dates and nutrition facts of that, I knew I was in trouble. I just accepted that challenge to make different healthy recipes with dates.

Today’s recipe tastes like a cross between sweet pastry, chocolate muffin, and butter cake. I suppose we should be calling them MUFFIN SCOOKIES!

Here’s What to Love About Date Muffins

  • 1 cup flour or almond flour

  • 25 gr butter

  • 13-15 Medjool dates

  • 1 tbsp vanilla extract

  • 2 tbsp cinnamon

  • 1 tbsp baking powder

  • 4 tbsp almond milk

  • 1 egg

  • 2 tbsp cacao powder

  • 1/4 cup walnuts


Preheat your oven to 155

In a non-stick pan, add your pitted dates with butter and saute dates for about 5-6 minutes.

Add dates into a mixer and mix it for a few seconds.

Add an egg to the dates with vanilla extract and 4 tbsp of almond milk.

In a bowl, add flour, cinnamon, baking powder, cacao powder, and chopped walnuts.

Add the dates and egg to the flour bowl and mix everything well.

Prepare your muffin pan with an oil spray.

Fill the muffin cups with the mixture and bake it in the oven for 23-25 minutes.
