Sweet corn salad

Fresh, comfy, healthy and tasty! what else do you expect from a salad. This salad would make a beautiful presentation at your summertime get-togethers, or on your dinner table. It goes well with grilled options and balances out heavier main dishes. I think it would look cute as an appetizer, served in small glasses or ramekins.

Ingredients:


200 gr sweet corn

1 red bell pepper

1 small red onion

1/4 cup fresh lemon juice

2 tbsp olive oil

1/4 cup chopped parsley

Salt & Pepper



Method:


In a bowl, chopped onion & bell pepper into very small pieces.


Add cooked sweet corn, parsley, salt & pepper & olive oil.


Mix everything perfectly & then add the lemon juice. Give it a toss and put it in the fridge for half an hour.


We want the salad to be marinated in lemon juice and olive oil.


Serve it into a serving plate and add more chopped parsley on top.
